Domaine Alain Chavy Saint-Aubin 1er Cru En Remilly
A pale gold wine. On the nose the wine opens with white-peach, poached pear and lemon zest with white blossoms, almonds and light brioche. The palate expresses ripe apple, yellow plum and stone fruit with subtle oak spice of vanilla, toasted hazelnut. Produced by Domaine Alain Chavy, a small Burgundy estate founded in 2003 by Alain Chavy who inherited family vineyards in Puligny-Montrachet and expanded into Saint-Aubin. Chavy’s philosophy emphasises terroir-expression, restrained oak usage, and long-term ageing potential in his whites.
Classification: Grand Vin de Burgundy
Grape Varietal: Chardonnay
Feature: Sustainable, Vegan
Country: France
Region: Burgundy
Appellation: Saint-Aubin 1er Cru “En Remilly”
Grape Profile: Chardonnay tends to exhibit apple, pear, and citrus flavors, while in warmer climates, they lean towards tropical fruit notes like pineapple and mango. Chardonnays can be aged in oak which can introduce flavors of vanilla, butter, and cream, and a richer, fuller body.
Region Profile: Saint-Aubin is a village appellation in the Côte de Beaune of Burgundy, lying in a side valley just west of the Côte d’Or escarpment. The “En Remilly” parcel lies on the lower slopes, just adjacent to the great terroirs of Puligny and Chassagne. The soils are argilo-calcaire (clay-limestone) and very stony, providing excellent drainage, minerality, and a cooler growing environment that preserves natural acidity.
Pair with: Richer fish like salmon and grouper. Poultry. Soft or semi-hard cheeses like brie and camembert. Pasta and rice dishes such as risotto and cream-based sauces.
