Château Bellevue-Cardon Pauillac
The nose is boldly aromatic, offering notes of blackcurrant, cassis, and ripe plums, with hints of cedar, tobacco, graphite, and black pepper. On the palate it delivers layers of dark fruit, toast, sweet tobacco, spice, and cedar. Château Bellevue-Cardon is a very small Pauillac estate associated with Château La Haye. The wine was first produced with the 2015 vintage, making it a relatively new name within one of Bordeaux’s most historic appellations. The estate’s focus is on expressing classic Pauillac gravel terroir through Cabernet Sauvignon-dominant blends that emphasize power, refinement, and fine-grained tannin.
Classification: AOC (Appellation d'Origine Contrôlée)
Grape Varietal: Cabernet Sauvignon, Merlot,
Country: France
Region: Bordeaux
Appellation: Pauillac
Grape Profile: Cabernet Sauvignon defines the wine, contributing cassis, blackberry, graphite, cedar, tobacco, mint, and firm tannin. Merlot softens the edges, bringing plum, black cherry, roundness, and a little extra mid-palate flesh. At only a small percentage of the blend, it plays a supporting role rather than changing the wine’s fundamentally Cabernet-driven identity.
Region Profile: Pauillac, one of the most prestigious appellations in Bordeaux’s Left Bank, is renowned for producing some of the world’s greatest Cabernet Sauvignon-based wines, including Château Lafite Rothschild, Château Latour, and Château Mouton Rothschild. The region’s gravelly soils, maritime climate, and perfect drainage create wines with power, structure, and longevity.
Pair with: Roasted beef, lamb chops, or filet mignon. Rich dishes like as duck confit, beef Wellington, and truffle risotto. Aged cheeses like Comté, Gruyère, and Gouda.
